Commercial Ice Machine Repair — FAQ
How often does a commercial ice machine need cleaning?
Manufacturers set the baseline at least every six months, and in South Florida you should treat that as a maximum rather than a target. Hard water scales faster here, and bakeries and pizzerias have airborne flour and yeast that load the condenser and water path far quicker than a typical bar does.
Is cleaning the same as sanitising?
No, and this is the misunderstanding that produces health findings. Cleaning removes mineral scale, which is what restores production. Sanitising kills the biofilm — the pink or grey slime that grows in the water path and the bin — which is what protects the product. A machine that looks spotless can still be growing biofilm where nobody sees it. Both steps are needed and they use different chemicals.
Why did production drop in the summer?
Ice machines are rated at specific air and water temperatures, and both go up here from roughly June through October. A machine in a hot back room or with a dirty condenser loses a significant share of its rated output once ambient climbs. Cleaning the condenser and getting airflow around the unit is usually a bigger win than any part.
Should we repair or replace an old ice machine?
Evaporators, boards, valves and pumps are worth repairing on most machines. Where it changes is a failed compressor on an older unit or an evaporator that has been scaled to the point of pitting — at that stage we will price both paths and show you the arithmetic, including what the machine is costing you in water and electricity to run in its current state.
